Passionfruit Melting Moments

This little babies are delightful! Crumbly, buttery and delicious! The ones I baked aren't small, so they were quite filling. But so good. So good.



Passionfruit Melting Moments
Ingredients

250g unsalted butter, softened
1 teaspoon vanilla essence
1/2 cup icing sugar
2 cups plain flour
1/3 cupscornflour

Passionfruit Filling
60g butter, softened
2 passionfruits
1 cup pure icing sugar sifted

Method
  1. Preheat oven to 160°C. Line 2 baking trays with non-stick baking paper.
  2. Using an electric mixer, cream butter, vanilla and icing sugar until light and fluffy. Sift flours over butter mixture. Beat on low speed until a soft dough forms.
  3. Roll heaped teaspoonfuls of mixture into small balls. Place on trays. Using a fork dipped in flour, lightly flatten each biscuit until 1cm thick. Bake for 15 minutes or until firm. Cool on trays for 10 minutes. Transfer to a wire rack to cool completely.
  4. Make passionfruit filling: Using an electric mixer, beat butter until light and fluffy. Stir in passionfruit pulp and icing sugar.
  5. Spread flat side of 1 biscuit with 1 teaspoon filling. Top with another biscuit. Repeat with remaining biscuits and filling. Dust with icing sugar. Serve.
    Makes 32.

Honey Joys

This little Honey Joys are simple and easy to make. But soooo yummy! Sweet and crunchy!


Honey Joys

Ingredients
90g butter or margarine
1/3 cup sugar
1 tablespoon honey
4 cups Kellogg's® Corn Flakes

Method
Preheat oven to 150°C. Line 24 patty pan with paper cases.
Melt butter, sugar and honey together in a saucepan until frothy.
Add Kellogg's® Corn Flakes and mix well.
Bake in a slow oven 150°C for 10 minutes.

Cool.

Halo! Well, I haven't blogged for a while... But that's because I went to Malaysia for a family vacation! Firstly went to Kuala Lumpur then Kota Kintabalu. It was humid, hot and HUMID. BUT Malaysian food is delicious! Curry Laksa. Roti. Chicken Rice. Nasi Lamak. Mee Goreng. YUM.

Music? And Cake? I'm there!

I went to my friend's place the other day. It was awesome fun! We were jamming music - me on the piano. And sang to awesome songs: Disney. :D

I tried playing the Ukulele, and I'm a master of FOUR chords. I'm quite proud.


We also made some pinwheel cookies. But this one, on the other hand, looks like a certain animal. Can you see it? Isn't it awesome?


Also, we ate a beautiful Laurent cake. It was divine.

Schoolies in Rye

Why hello!
So this year, to celebrate the end of Year 12, my friends and I decided to go to Rye to chillax. We went to so many places within four days, and it was "awesome-ly" fun!

Well, because I LOVE cooking, I cooked every night for them. But meh, it's all good! I love it!
We went to Sorrento. Walked around. Took a few pictures. Ate the BEST VANILLA SLICE EVER! (I will attempt making it... soon.)

We, then, went to Ashcombe Maze and Lavender Gardens in Mornington Peninsula. Everything was sooo pretty! The maze was pretty awesome - the number of dead-ends that I walked into. Sigh.
